It works now!

Thank a lot to all of you guys!

So, for the record, I had to:

1- use ejabberd 2.0.1 standard binary installation downloaded from Process-One
2- set {s2s_use_starttls, true}. in the ejabberd configuration file (and don't forget to uncomment the {s2s_certfile, ..} line just below).
3- configure the SRV records of my DNS correctly with something like:

_xmpp-client._tcp 10800 IN SRV 5 0 5222 xmpp.ubithere.com.
_xmpp-server._tcp 10800 IN SRV 5 0 5269 xmpp.ubithere.com.
_jabber._tcp 10800 IN SRV 5 0 5269 xmpp.ubithere.com.
xmpp 10800 IN A 193.253.216.132

4- configure my server's DHCP client to use a good DNS instead of the faked/proxy one present in my modem-routeur (France Telecom Livebox) by adding the following lines to the /etc/dhcp3/dhclient.conf:

prepend domain-name-servers 81.253.149.1;

That's all ;-)
