Of course it will be hard when you're writing the config from scratch.
Take the default config from [1], modify `hosts` and `certfiles` 
options. It should be enough to run ejabberd.
And yes, it's possible to use wildcard certificates. Note that all your 
domains must be listed in SAN extension of the certificate.
Also, read ejabberd warnings carefully, they are pretty 
straightforward. The error you see is the result of a missing 
certificate, and ejabberd has warned you about it a few lines above in 
the log, you just ignored it.
